If it only has 1 stream of each type, then...

which I guess is exactly the same. It is. From what I found in the documentation and on various forums, yes, streamcopy should be lossless. If your audio player is Foobar2000, then you don't have to do anything. Foobar2000 will happily play a video-file's audio stream.
If not, then what's wrong with extracting the audio stream?

That's impossible. You're changing the audio stream so you have to re-encode (convert).
