The problem is that PowerShell has a "programming" concept instead of a "command line" concept. The cause is that, within batch files , "%" is used to indicate a variable. So the line: c:\ffmpeg\bin\ffmpeg.exe -i MVI_5233.MOV -r 1 videos/temp/essais%4d.png gets interpreted as: c:\ffmpeg\bin\ffmpeg.exe -i MVI_5233.MOV -r 1 videos/temp/essaisd.png and ffmpeg crashes because it does not see the r...

I tried your sample with your exact command line, and it works. Granted, there's about 1.5 seconds at the beginning where there was no motion, a clear indication of "missing keyframe", a certain danger of using the "copy" method. To the best of my knowledge, the only sure-fire method to prevent this...
